What a PDF quietly carries
Beyond the visible content, a PDF stores a title, an author, a subject, keywords, the software that created it, the software that produced the PDF, and creation and modification timestamps.
Several of those fill themselves in without anyone choosing them. The author is usually whatever name is configured in Word or the operating system. The producer names the exact software and version. And the title is frequently the original filename — which on a document exported from a template is often something like invoice-template-FINAL-v3-clientname.docx.
Why it matters
Documents get sent to people they were not written for. A CV carries the name of the person whose template you started from. A tender response carries the internal project codename. A "confidential" report names the analyst who wrote it. None of it is visible on the page, and all of it is one properties dialog away.
Stripping metadata before sending a document outside your organisation costs nothing and removes an entire category of accidental disclosure.
Two places, both updated
PDFs store metadata twice: a legacy dictionary and a newer XMP block. Editing only one leaves the old values showing in whichever reader looks at the other, which is why some tools appear to do nothing. Both are updated here.
What it does not touch
Anything written into the visible content — a name in a header, a signature block, or text inside an embedded image. Metadata editing changes the file's properties, not its pages.
